Nutrition and Dietetics
Nancy J. Correa-Matos is an Assistant Professor in the Department of Nutrition and Dietetics. She has a PhD in Nutritional Sciences from the University of Illinois. Since 2006, she has been teaching undergraduate and graduate courses in nutrition science, metabolism and medical nutrition therapy. Last year, she was awarded the Jacksonville Dietetic Association Distinguished Dietitian for her work as an outstanding educator. She has been awarded Best Instructor by the UNF Eta Sigma Gamma Student Sorority and nominated for Outstanding Graduate Teacher Award in 2007 and 2010. Her work as a mentor for undergraduate research since 2008 has been recognized by yearly nominations as Mentor of the Year in Scholars Transforming Research Program. She is the representative at a national level in the American Dietetic Association Mentorship Program for Latino students in dietetics. In 2011, she was awarded with a TLO scholarship to take UNF dietetics students to Puerto Rico to increase cultural competency in health professionals. She has received multiple external and internal grants for the prevention of chronic diseases in minorities, children and at risk populations. She has written several book chapters for peer-reviewed publications, co-editor of the Florida Medical Nutrition Therapy Diet Manual. She is also co-author of the book “Latino Food Lovers’ Glossary. Her service contribution at UNF has included chairing the Food Advisory Council, serving as Co-Chair of the Hispanic Council, member of the Academic Program Committee for the Faculty Association, Board Member for the Child Development Research Center (CDRC) and served in several search committees for different Colleges. In terms of community outreach, she participated in local radio shows, wrote for the monthly health column in local Spanish newspapers, and for the Florida Times Union. Dr. Correa, as part of her service to the profession, has been appointed as chair of several committees for local and national professional associations.
