Course Description:
This course teaches concepts, skills, and research designs and methods relevant to nutritional epidemiology. It covers research methods to assess dietary intake, biochemical indicators of dietary intake, body composition, and physical activity, as well as survey design and implementation. This course provides a discussion of national surveillance systems used by the US government to monitor nutrition and health of the population, and presents critical issues related to global nutritional epidemiology with a focus on food fortification strategies to improve the nutritional status of global communities. Prerequisite: HUN7831: Grant Development.
