HUN 1001 is an introduction to nutrition science using the scientific
method and
natural sciences principles from biology and chemistry to explore nutrient
structures, usage/ metabolism, functions, sources, standards, and roles in
health and disease; and basic research methods (2 hours lecture weekly).

Basic Principles of Human Nutrition
HUN 2201 Basic Principles of Human Nutrition is an introductory nutrition
course for majors in the Brooks College of Health and others with a personal
interest in nutrition. We study foods and nutrition relative to the
health and well being of the individual and community. Dietary habits,
nutrient requirements, food choices and good eating practices are included.

Nutrition Therapy II
In DIE 3246 Nutrition Therapy II students assess nutrient needs and
develop nutrient-based care plans for persons with various disease states.

Advanced Administration of Food and Nutrition Services
DIE 6127 Advanced Administration of Food and Nutrition Services offers
graduate students and practicing dietitians the leadership and management
skills needed to establish and maintain effective food and nutrition
programs in the future. Food service and clinical nutrition management
are addressed so students can be prepared in a changing healthcare environment.

Quantity Food Preparation
FSS 4230 Quantity Food Preparation is a classroom course taken with
FSS 4230L that teaches large-scale food preparation principles for application
in a variety of commercial, institutional, and community based settings.

Field Experience
FSS 4230L Field Experience in Quantity Food Preparation is a laboratory
course taken with FSS 4230 that provides practical applications of quantity
food preparation principles in the same settings. Students work on campus
in UNF's University Center, Osprey Cafe, Sbarro's and Sub Generation.
