Experience
2002 - Present. Director of Nutrition Program and MSH/Dietetic Internship,
University of North Florida (UNF), Jacksonville, FL. Supervising up
to 12 dietetic interns per class during their didactic courses and internship
program of 1200 hours supervised experience in clinical, community,
food service and specialty rotations.
2001 - Present. Director of the Nutrition Program and Assistant Professor,
Department of Public Health, University of North Florida (UNF), Jacksonville,
FL. Responsible for teachingundergraduate and graduate classes in nutrition
and food science, directing research in nutrition, and participating
in various committee and service activities.
1996 - 2001. President and Director of Continuing Education , Professional
Development Resources, Inc., Jacksonville, FL. Responsible for obtaining
and maintaining continuing education approvals for seminars and home
studies for health professionals, research and development of seminar
and home study material, and serving as a seminar instructor and author
of home study materials.
1986 - 1996. President - Nutrition Associates, Inc., Jacksonville, FL.
Responsible for directing the corporation that specialized in the provision
of nutrition consultation and nutrition education materials for health
care professionals and the public. Served as a nutrition consultant
for nursing homes, retirement centers, mental health centers, developmental
disabilities group homes, correctional facilities, and health spas.
1988 - 1996. Instructor- Institute for Natural Resources, Inc., Emeryville,
CA.
Instructed two 6-hour seminars each week for health professionals throughout
the United States. Responsible for seminar preparation, presentation,
and oversight of registration including assuring that the requirements
for all health professionals in attendance were met in order to provide
continuing education credit.
1998 - 1996. Chairman - Dietetics and Nutrition Practice Council, Board
of
Medicine, Agency for Health Care Administration, State of Florida. Appointed
by
the Governor. Supervised activities of the Council in regard to licensing
dietitians
and nutritionists in Florida.
Grants
2003. Florida Dietetic Association Grant
of $15,000 to serve as Editor of the Florida Diet Manual to be published
in 2005.
1985-1988. Ross Laboratories Grant Recipient
- Two research grants totaling $50,000 to study the effects of a low
carbohydrate formula (Glucerna) on blood sugar in patients with diabetes
in outpatient settings.
