NUTRITION

 

Mission Statement

 

Through excellence in teaching, research, and service the UNF BSH/DPD Nutrition Program will meet the growing needs of the dietetics profession by preparing students for advancement to CADE accredited internships, related work experiences, or post baccalaureate studies. Teaching excellence is accomplished by providing a sound didactic curriculum, instructional innovation, and continuing evaluation of teaching and its outcomes. Excellence in research has a dual approach: to explore current nutrition issues and test approaches to nutrition education. Excellence in service is promoted by encouraging faculty and students to serve at institutional, local, and national levels.

 

Student Learning Outcomes

 

Graduates of the BSH Nutrition program will demonstrate the ability to:

 

Content/Disciplinary Knowledge & Skills

         Interpret medical terminology

         Interpret laboratory parameters related to nutrition

         Apply microbiological and chemical considerations to process controls

         Calculate and interpret nutrient compositions of food

         Determine recipe/formula propositions and modifications for volume food production

         Apply food science knowledge to functions of ingredients in food

         Demonstrate basic food preparation and presentation skills

         Modify recipe/formula for individual or group dietary needs

         Screen individuals for nutritional risk

         Collect pertinent information for comprehensive nutritional assessments

         Determine nutrient requirements across the lifespan

         Calculate enteral and parenteral nutrition formulations

         Determine cost of services/operation

         Prepare a budget

 

Critical Thinking Skills

         Interpret current research

         Interpret basic statistics

         Interpret financial data

         Apply marketing principles

         Measure, calculate, and interpret body composition data

         Calculate and/or define diets for health conditions addressed by health promotion/disease prevention activities or uncomplicated instances of chronic diseases of the general population, e.g. hypertension, obesity, diabetes, and diverticular disease

         Translate nutrition needs into food choices and menus for people of diverse cultures and religions

 

Communication Skills

         Use oral and written communications in presenting an educational session for a group

         Counsel individuals on nutrition

         Document appropriately a variety of activities

         Explain a policy position regarding dietetics

         Use current information technologies

         Work effectively as a team member

         Develop a personal portfolio

         Demonstrate beginning leadership and interdisciplinary collaboration skills in the provision, delegation, supervision, and coordination of nutrition care and food management

         Demonstrate ethical, professional behavior with patients, clients, colleagues and others in fostering patient advocacy and professional accountability

         Incorporate in practice and professional practice standards, effective written and verbal communication skills, and the use of media resources and information technology

 

Assessment Approaches

 

One of the direct measures to be used to assess content knowledge will be pass rates on the national Registered Dietitian Exam. Majors will also prepare a portfolio to demonstrate how they achieved the CADE Foundation Knowledge and Skills. These direct measures of student achievement will be supplemented by such indirect measures as job placement rates, preceptor and employer evaluations, alumni surveys and student perception surveys.
